Whenever I Google easy recipes, more often than not, I find a laundry list of ingredients and directions that are too long to retain. I guess my definition of easy is pretty pathetic in the world of cooking, so I wanted to share my actually EASY meals.
Savory OR Sweet Lemon Salmon
I love salmon as an option for Mom and baby (6 months and older). It’s rich in DHA and Omega 3 fatty acids that help baby’s growing brain with cognitive development. I started this early and it is still my daughter’s favorite meal.
MAKES: 4 SERVINGS
PREP: 5 MINS
COOK: 25 MINS 450°
Carrots (substitute favorite veggies)
Salmon Fillet(s) (1.75 lbs)
McCormick’s Lemon Pepper Spice (To taste) OR Lemon Butter Dill Seafood Sauce (2 tbsp.)
Quinoa (1 box - Goya brand)
Olive Oil (1 tbsp.)
3) Shave and cut carrots, (or prep ahead of time, see 3 Timesaving Tips for Making Healthy Dinners) then spread evenly in the steamer basket.
4) While carrots are steaming to desired softness, place salmon fillet on a baking pan. Spread lemon pepper spice OR Lemon Butter Dill Seafood Sauce evenly over fish. Bake, uncovered, (20-25 minutes) until fish flakes easily with a fork.
5) Add Quinoa to the saucepan and boil for 30 seconds. Reduce heat to LOW and cook until water is absorbed (15-17 minutes), then remove from heat and let stand (5 minutes).
